Just made this and it is FABULOUS! My hubby just retired from the fire dept and they’d always go eat at this little Italian restaurant. He’s missed it. He said this is just about as good!! I added mushrooms when it was done cooking

This is NOT a canner. Canning food requires a completely different pot. I have both. Not only is this not suited to canning (as it doesn’t maintain the pressure sufficiently and the pressure is not adjustable for altitude) but it is so small if you foolishly would use it for canning, it would only hold a few jars. For up to date canning rules, the Ball Blue Book is the most current and accurate resource. What this is excellent at is cooking relatively quickly without having to babysit the pot. How long is normal for the instant pot to warm up? Mine took 15 minutes, so tack that on to the 20-minute cook time, and this meal is no longer quick like most IP recipes claim. I guess that’s more of my complaint about IP recipes in general. Those 5-minute recipes? Not so quick if you add on prepping, sautéing and warming up!

Was all the water absorbed? I always taste test when I take off the lid to see if it’s tender, and in the case of certain quinoa varieties (like red quinoa) I’ll leave the lid on a little longer and just let the steam help it get softer.
