Can the recipe be adapted to use boneless skinless chicken thighs? I am new to using an Instant Pot.

March 11, 2013 CHICKEN RECIPES THIS was a huge hit with us! Everyone literally slurped down the gravy 🙂 I used a 2.5lb roast and it was perfectly done, baby carrots and all. one subscriber asked what to do with the 4 or 5 cups of leftover broth, and i can tell you it makes a fabulous french onion soup! Thanks for the great pot roast recipe!
share & print! Like I said, you don’t need a fancy pressure cooker to make chicken stock or broth. You can absolutely do it on the stove top or in a regular (and inexpensive) slow cooker. I’ve made tutorials for both in the past: How to Make Chicken Broth and How to Make Slow Cooker Chicken Broth. With both of those methods, just keep in mind that the longer the cook, the better.
This recipe is outstanding. I’ve already made it a few times. Here’s a potentially stupid question, but I’m new to pressure cooking, so please forgive me. If I want to double the recipe to serve more people, how do I accommodate more chicken in the IP? 1.5 lbs of thighs basically covers the bottom of the pan. Should I just stack the additional chicken on top? Put them on a rack? Double the sauce? Additional cooking time? Thanks!

Poached Eggs: Lightly grease 1 to 4 (depending on how many poached eggs you want) Pyrex custard cups with butter or oil. Put a cup of water in the bottom of your Instant Pot, put a steamer basket or trivet in the pot (making sure that the water doesn’t come over the top), and set your Pyrex cups in the steamer basket or on the trivet. I use my Oxo steamer basket for this, and I love that when they are done I can just grab the handle and pull the whole shebang out (remember the handle will be HOT, be sure to wear an oven mitt). Use Manual setting, low pressure, for 2 to 3 minutes. 2 minutes will probably be enough unless you’re at a high altitude.

FUN FACT – and in keeping with the oven analogy, if ever your food is not cooked enough after Pressure Cooking, just put it back into the Pressure Cooker and cook it some more, using 1-5 minute increments. It is never a problem to use your Pressure Cooker immediately after releasing pressure!

I also added some Shichimi Togarashi (Japanese hot pepper) which gave it a little zing. This one’s a keeper! I was hoping for more recipes but, still, it gives great directions on how to use the Instant Pot. Some of the recipes require a lot of stove top prep work.

Lock the lid into place and close the steam valve. Press the “Manual” button, which is just the basic pressure cooker function. The display will show 30 minutes, which is the default time set for that mode. We want 30 minutes, so no need to press + or – to adjust the time. After 10 seconds, the display will switch to “On” and it will begin to heat. Once it reaches the proper heat and pressure (after about 10-15 minutes), the display will begin to count down 30 minutes.

I’m looking for something fast, easy and not too spicy. I’m not mad on curry, which seems to rule out about 20% of the recipes.
