The biggest challenge people have when baking this in the oven is that the sauce/gravy dries out. I would suggest adding a little bit of water (1/4 cup or so) before baking, and then periodically throughout baking as needed. The browned gravy will be really delicious, and a little water mixed in will easily bring it back to life.

January 13, 2018 at 12:27 PM Tried this recipe with a 2.33 pound chuck roast and it was the toughest roast I’ve ever had. Did 60 minutes and the veggies were perfect but the roast sadly went in the trash. Where did i go wrong? Too long for that small of a roast? I DEFINITELY couldn’t shred the roast or even cut it it was so tough.

The Instant Pot has been unable to match the depth of flavour I get from stove-top cooking, although this might have something to do with the recipe I chose. I regret that I allowed technology to override my instincts. I consider it a sin to put Worcestershire sauce in a ragu, for instance. I taste the bolognese. Later, when the kids are in bed, I order pizza.
Still learning with my Instant Pot I got fir Christmas. Just made this tonight… HOME RUN! We loved it and hubby went for seconds – so it’s a keeper for sure! Thanks for the great recipe!

A confession: I already own a stovetop pressure cooker, the conventional kind that you would heat over a burner and then regulate yourself. It is currently supporting a colony of dust bunnies in the back of my highest cabinet, behind the panini press. I never got over my fear of exploding split-pea soup to use it with any regularity.
A 6 quart instant pot will work fine for this recipe. However, I have not tried it using the slow cook function. Without further recipe testing, it is hard for me to give an accurate response.

hi there — great recipe flavor wise, but there is not enough liquid called for to pressure cook this. tried twice and got BURN both times, a really thick burnt layer too not just some small sautéed pieces. tried adding 2 cups more liquid and that still wasn’t enough. finally transferred to stovetop to simmer to finish off the rice.

I have always used McCormick seasonings for my sauce. It is made by adding water and tomato paste. Questions: Should I make the sauce first then add it and the additional water? My line of thinking is that would be the case since the recipe is using premade jar sauce.

What these mean is simply either “let the pressure dissipate on its own” (natural pressure release), or “force the pressure to escape immediately by turning the steam release handle counter-clockwise to the open position (quick release). The reason for using quick release (QR) is not because you are too impatient to wait for natural release, but because your food will be over cooked if you don’t get it the heck out of dodge once it’s done cooking at pressure. A really good example of a food needing quick release is poached eggs (which come out *perfectly* in the Instant Pot (see how to poach eggs in the Instant Pot below)). On the other hand, lots of (if not most) foods need the natural release – it’s part of their cooking process and processing time.
