I think I’m the last person on earth to jump on the Instant Pot bandwagon. I’m a low and slow gal through and through I guess. Though I am crazy curious about this whole world of cooking! I’ve been very very tempted to look into one after reading recipe after recipe from this miracle appliance!

Hello do you have spicy Thai style chicken coconut soup recipe? I second ladybugbates — I read on the InstantPot instructions to always add cornstarch thickener after pressure cooking as it can sink to the bottom and interfere with the temperature regulator during pressure cooking. Actually, I just made it last night (delicious!!) and didn’t even end up adding thickener. Putting it in the oven for those last 20 minutes really thickened it up nicely.

I used a lean ground beef /pork blend, still so good, Only thing I did different than the recipe is used spaghettini noodles. A little skinnier than spaghetti. I also increased the time to 10 minutes because my husband can’t eat eldente (sp?). This was by far the easiest and most favourite dish I’ve made so far. I especially like it’s just spices in with the meat sauté and not cutting and chopping. Although I know that we can easily add onions and peppers, but if you pick a good pasta sauce there is no need for that extra work. Everything was done perfect. I don’t know how, or why this works. And my fav part is also that it’s quick release. Really …with pasta? But yup. It worked. Means we could dig right in once the timer finished cooking! Ps … I have a 6 quart and it was perfect!

Home run! In a family of 5, it’s hard to find new recipes that everyone likes. I made this for a night when everyone would be eating at different times due to our crazy schedules. Each person commented about how much they liked it, even my picky 13 year old! She even declared it better than the takeout from the local Chinese restaurant. Will definitely make it again and give some of your other recipes a try. Thanks!

how did it turn out with coconut milk? I want to throw in some coconut oil for some coco flavor… A 6 quart instant pot will work fine for this recipe. However, I have not tried it using the slow cook function. Without further recipe testing, it is hard for me to give an accurate response.

You make a very convincing case for the instant Pot! Eventually I will probably cave. Boeuf bourguinon is a favorite, so pretty exciting to see I could have it in 30 minutes!
